I realized this morning that I have not been writing, In any way, shape or form. This is going to be my attempt at getting back into the swing of it.
So to kick things off.
I made a new recipe today off of my pinterest board. For dinner I made pork tenderloin with a lovely glaze as well as buttery mashed potatoes. I thought about adding some cream corn, because I had an extra can but got too hungry to wait to heat it up.
The recipe I used was from the foodie2sisters blog.
I mean seriously. Does this not look amazing??
The picture came from their blog because I was not planning on actually writing tonight.
It was incredibly simple to make and the results are amazing. The pork stayed amazingly moist and my glaze came out a lot darker. I probably added too much honey to it. The only thing I might do differently next time, and oh there will be a next time, is that I will probably marinade them in a ziploc bag; either overnight or just for the afternoon. I thought that the meat didn't take on as much of the flavours as it could have.
While it was baking I got to do a few rows on my winter-ish hat that I am making. The pattern is called fairy snowcap. It can be found on ravelry. The designer is Rosemary Hill aka Romi Hill. It has been a super quick knit and now I am torn between doing a pom pom on the top or tassels.
